Your Comfort Drink: Iced Banana Bread Matcha Latte

There is a specific kind of comfort attached to the smell of banana bread baking. It’s warm, nostalgic, and instantly calming.

We wanted to capture that "freshly baked" feeling and transform it into a cooling, energising drink. The result is the Iced Banana Bread Matcha Latte.

The earthy, umami notes of Daily Matcha are balanced perfectly by a homemade banana bread syrup.

It tastes indulgent, but it fuels you with the same steady, calm focus you expect from your daily cup.

Here is how to make your ultimate summer treat.

Part 1: The Banana Bread Syrup

The secret to this drink is the homemade syrup. By simmering ripe bananas with brown sugar and spices, you extract that deep, caramelised flavour that mimics a freshly baked loaf.

Prep time: 5 minutes | Cook time: 10 minutes | Yields: Enough for 4–5 lattes

Ingredients:

  • 1 very ripe banana (the browner, the better for natural sweetness)
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp pure maple syrup
  • 1/2 cup water

Method:

  1. In a small saucepan, mash the ripe banana with a fork. Add the brown sugar, cinnamon, maple syrup, and water. Stir to combine.
  2. Place the saucepan over medium heat. Once it begins to bubble, turn the heat to low and let it gently simmer for about 8–10 minutes until thickened. 
  3. Remove from heat. For a velvety smooth latte, pour the hot mixture through a fine-mesh sieve into a jar or heat-proof container. Use the back of a spoon to press as much liquid through as possible, leaving the banana pulp behind.
  4. Let the syrup cool completely before using it in your iced latte.

(Pro Tip: Store leftover syrup in an airtight jar in the fridge for up to a week. It’s delicious drizzled over breakfast oats or pancakes, too.)

Part 2: The Iced Latte Assembly

We recommend layering your drink for the most aesthetic presentation.

Ingredients:

  • 1 tsp Daily Matcha powder
  • 60ml hot water (not boiling)
  • 2–3 tbsp Banana Bread Syrup (adjust to your sweetness preference)
  • 250ml milk of choice (we love to use oat milk)
  • A tall glass of ice

Method:

  1. In a small bowl, sift your Daily Matcha powder. Add the hot water and whisk vigorously with your bamboo or electric whisk until thick and frothy.
  2. Pour the cooled Banana Bread Syrup into the bottom of your tall glass.
  3. Fill the glass with ice. Pour your milk of choice over the ice, leaving a little room at the top.
  4. Slowly pour the frothed matcha over the milk and ice. Watch as the vibrant green layers swirl into the creamy white milk.
  5. Stir gently with a glass straw to combine the flavours and enjoy immediately.
